Adrak ke Punjey

Non-Veg

Roasted lamb chops with ginger, toasted cumin, cardamom, cloves and cinnamon.

'Adrak ke Punjey’, when literally translated, means 'claws of ginger'. And ginger certainly plays an integral flavour in this dish from the courts of the rulers of Awadh. This rack of lamb is a recipe rarely seen in restaurants in India, and is a treasured heirloom recipe of India’s most famous Awadhi chefs.
